New Feature! Culinary Corner
Its time we start sharing recipes on Lake Effect! Of particular interest are the staples, those tried and true simple and quick recipes you make and enjoy most frequently.
I'll start things off with this vegetarian taco salad that Heather and I enjoy at least once every two weeks:
Al Fiesta Greens Taco Salad
1 head of romaine lettuce chopped
1 tomato chopped
1 can of whole chilies chopped
1 cup of planters cocktail peanuts
2 cups tortilla chips crumbled
1 cup shredded sharp cheddar cheese
1 lime
4 tablespoons of Brianna’s Vinagrette (must be this brand and type!)
½ 12 once package of Mexican Style Smart Ground
½ cup salsa
In a medium size mixing bowl, layer top 6 ingredients in order twice using half of each quantity.
Add dressing and squeeze lime over mixture, then twist/mix with tongs
In a frying pan, heat Smart Ground with salsa mixed in.
Plate salad mixture and add a large scoop of smart ground on top
Put on side one of Al Green’s “Al Green Gets Next to You” and serve with a side of sour cream

What, pray tell, is "Smart Ground"? I assume some kind of fake meat?
Ooh! Sounds yummy and I like the idea of recipe posts.
